Fall Recipes Forever

Can we start a petition for pumpkin to be a thing year-round? Anybody down? Perfect. Let's do it.

I'm actually obsessed with all things pumpkin. Call me basic. Whatever. If it was acceptable, I would put pumpkin pie spice on everything. Seriously.

I also have a strange obsession with protein pancakes. So pumpkin protein pancakes have been a thing lately. And I could live off of them.

I also have no pictures of this. Because I'm a terrible blogger. Whoops.

But here's my recipe:

1/3 cup pumpkin puree
1/2 cup liquid egg whites
1/4 cup rolled oats
1/2 tablespoon coconut flour
Tons of pumpkin pie spice
Tons of cinnamon

I usually top these with fat free whipped cream and cinnamon sugar (whoops). And occasionally some dark chocolate chunks (also whoops). But you do you.

I'm working on finding a way to make these lower in carbs but keep a similar consistency, so if you've got any ideas, holla atcha girl. 

I'll photograph these next time I make them to show the world that I'm not the world's worst blogger.
