Monday Munchies: Cheesy Zucchini Quinoa

The fact that this post is going up before 10PM is quite possibly a miracle. But I guess this is what happens when I don't have a million things going on with school on top of everything else. And I don't hate it. 

I found this recipe earlier today on Pinterest as I was trying to figure out what to eat this week to avoid being as fat as I was last week. And I stumbled across this and figured it would be a great lunch and solid side dish for some dinners.

And I had all of the ingredients already in my fridge and pantry. Yes
And it's simple. I can deal.

Stuff you need:
1 cup of quinoa
2 cups chicken/veggie broth or water (I used half and half)
1 medium zucchini
1 cup of cheese
Salt and pepper to taste


Cook the quinoa (based on the boxes instructions) in whatever liquid you choose for about 15 minutes (until it absorbs it all). While that's cooking, grate your zucchini. 


When your quinoa is done cooking (make sure there isn't any liquid left- it will make it runny), toss in the zucchini and cheese, and mix it all up. 


I ate this for lunch today and it was so tasty. And better for you than mac & cheese-- my weakness. It's also much more filling. Currently stuffed.
