Monday Munchies: Salsa Chicken

If you should know one thing about me-- it's that I love Mexican food. It's actually somewhat of a problem. It wouldn't be if it wasn't so God awfully terrible for you. 

So instead of consuming thousands of calories eating Mexican every day of my life like I wish I could, I've found a better alternative: salsa chicken.

It tastes a lot of the chicken they put on nachos at Mexican restaurants and you can make it in a crockpot while you are gone all day... That's what I'm talking about. 

I saw a recipe on Pinterest a year ago or so, and now salsa chicken has become a staple in my kitchen. 

Because it's a crockpot recipe, it honestly couldn't be much simpler. Literally 5 ingredients. 

Toss in 3-4 large chicken breasts (about 2 pounds), taco seasoning, cream of chicken soup (I use 98% fat free) and a whole jar of salsa. 

It'll look a little something like this.

Then let it do it's thing for 5-ish hours and you'll have this ugly looking thing:

Take two forks and shred the chicken. It will literally pull apart without much effort at all. It's kind of mind blowing, actually.

Once you've shredded it, and it looks something like above, mix in the sour cream (I used 8oz, the original I used used 12oz-- I also used fat free here) until well blended. The color will change a bit.

The sour cream really does finish it off perfectly. When I originally sent this recipe to my mom, she didn't want to use sour cream and made a batch without it then one with it and confirmed that the sour cream does make it that much better.

Put this stuff on tortillas, chips, anything really. Or by itself-- been there done that many times. Tonight I ate it as nachos because I was lazy and didn't want to deal with making a quesadilla or much else. 

I plan on eating this pretty much every day this week because a) I've got about 2 pounds of it and b) it's amazing.
